Henrik RydgårdandClaude Opus 5.5 89d7d69551 Metal: Tell 16-bit format support by GPU family, not by platform ...

The simulator check didn't compile on macOS, where the define doesn't exist.
The simulator's device reports only the Apple1 and Apple2 families, so require
Apple3 instead, which every device iOS 15 runs on has. Also silence the BC
format availability warnings in DataFormatToMetal, since GetDataFormatSupport
already checks for iOS 16.4.
